Ingredients:
4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
3 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons ground cinnamon
3 cups grated carrots
Directions:
preheat oven to 180C
Grease and flour a 13x9 inch pan
In a large pan beat together all ingredients in the order stated above and make sure you have a smooth mixture before stirring in the carrots evenly
pour mixture into pan and place in oven for 45 minutes
test with a toothpick and if clean then cake is done

allow cake to cool for 10 mins before adding frosting
Ingredients and directions for frosting:
1/2 cup softened, unsalted butter (at room temperature)
1 1/2 or 2 cups cream cheese (depending on cake yield)
2 cups of sugar
1 teaspoon of vanilla extract
PLACE CAKE IN FRIDGE FOR AN HOUR AND THEN ENJOY :)
